Strawberry, tangerine, basil and ginger syrup smoothie

Yes, I know, another smoothie! This one was so good, I wanted to share. And although I know that making a smoothie doesn’t really require a recipe, I did add a quick simple syrup to this one and thought you might like to hear about how I did that. Even if you don’t need the step-by-step, I hope my flavor combination will inspire you to try this out. And yes, I realize that it looks like Pepto Bismol, but I promise it doesn’t taste anything like it!!

Strawberry, tangerine, basil and ginger syrup smoothie

Ingredients:
A bunch of strawberries
1-2 tangerines
A few basil leaves (I used a variety that has very small, super fragrant leaves)
2 yogurts, vanilla or plain
1 2 inch piece of ginger, cut into thin disks
1 C water
1/4 C sugar

Begin by making your syrup. Mix the sugar, water and ginger together in a small saucepan over medium heat, stirring until sugar dissolves. Let it come to a light rolling boil and simmer for about 15 minutes more, until the syrup has reduced a bit and thickened, and the ginger taste is present in the syrup. Let cool.

Place fruit, yogurt and basil in a blender. Mix on high until your smoothie is nice and smooth, then drizzle in the syrup, little by little, stopping when you reach the right level of gingery sweetness. Store the remaining syrup in an airtight container and use as a sauce for fruit salad or to sweeten yogurt.
